Fresh and Fantastic Homemade Waffles

2 cups White Lily Self-Rising Flour

2 Eggs, beaten

1 Tbsp Brown or White Sugar

1-3/4 cups Whole or Low-fat Milk

1/2 cup Canola or vegetable oil

1-3/4 teaspoons pure vanilla extract

2 to 3 Tbsp mini chocolate chips if desired

Beat eggs in medium bowl until fluffy. Whisk in remaining ingredients. Combine thoroughly. Let batter rest for 10 minutes to a few hours. Pour into waffle maker. Serve with butter and sugar free syrup. Makes about 12 individual waffles.
