This soup is fast and delicious. Can be made on the stove or in a crockpot, if desired.
2 quarts Chicken Stock, one regular, one low salt
3 cups water
1 Knorr Chicken bouillon cube
1 Tbsp. Olive oil
½ Red or Yellow Onion, diced
1/2 carrot, grated
½ cup frozen Lima Beans
½ cup frozen, cut Green Beans
¼ tsp of Rosemary
1/8 tsp of Italian Seasoning (Marjoram)
¼ tsp of Basil
1/8 tsp of Thyme
1/8 of tsp of Fennel seeds
20 oz frozen Small Meatballs
27 oz package of Chicken Tortellini
Saute’ onion and carrot in olive oil. Add to large stock pot.
Add Lima beans, Green beans, chicken stock, water, bouillon cube, and seasonings to pot.
Bring to a boil, then simmer for 10 minutes.
Add meatballs, and return to boil. Simmer for another 10 minutes.
Add tortellini. Cook for 4 minutes until cooked thoroughly. Ready to serve.
